Oporto wine is a natural and fortified wine, produced exclusively from grapes from the Douro Wine Region in the north of Portugal, about 100 km east of Oporto. Régua and Pinhão are the main centers of production, but some of the best vineyards are in the area further east.
The manufacturing process, based on tradition, include stopping the fermentation of wine by adding grape brandy (brandy or benefit), the blending of wines and aging.
The wine is distinguished from ordinary wines for their particular characteristics: a wide diversity of types in a surprising richness and intensity of flavor unmatched, or a very high persistence of aroma or flavor, a high alcohol content (usually between 19 to 22% vol.), a wide range of sweetness and great diversity of colors. There is a set of categories that identify the different types of Port Wine.
The color of the different types of port may vary between the jet and light blond, with all possible intermediate shades (red, red, blond, blond and light blond). The White Port in various shades (pale yellow, straw and white gold), closely related to production technology. When aged in cask for many years, white wines acquire, by natural oxidation, a light tawny shade of red wines similar to very old.
In terms of sweetness, port wine can be very sweet, sweet, semi-dry or extra dry. The sweetness of wine is a manufacturing option, depends on when the interruption of fermentation.
